Finding time for breakfast in our busy lives can be a challenge but it’s so important to start the day with a nutritious meal. Luckily, there are plenty of quick and easy breakfast ideas that are both delicious and simple to prepare. Today, I’m sharing seven of my favorites that are sure to please even the pickiest eaters.

1. Avocado

Avocado toast has become a breakfast staple for good reason—it’s wholesome, tasty, and takes just minutes to prepare.

How to Make It:

  • Toast the Bread: Start by toasting your favorite type of bread. Whole grain is usually my go-to for some added fiber.
  • Mash the Avocado: In a small bowl, mash half of a ripe avocado with a fork and add a pinch of salt and pepper.
  • Spread and Top: Spread the mashed avocado on your toasted bread and top it with optional extras such as sliced cherry tomatoes, a sprinkle of chili flakes, or a dash of lemon juice.

One of my favorite variations is adding a poached egg on top for some extra protein!

2. Overnight Oats

If mornings are a rush, overnight oats might be your best friend. They’re prepared the night before, making your morning smooth and stress-free.

How to Make It:

  • Combine Ingredients: In a mason jar or container, combine 1/2 cup of rolled oats, 1/2 cup of milk (any kind), and a scoop of yogurt.
  • Customize Your Flavor: Add your favorite mix-ins like chia seeds, nuts, honey, or fresh fruits. My go-to is a handful of fresh berries and a sprinkle of cinnamon.
  • Refrigerate: Cover and refrigerate overnight. In the morning, give it a good stir, and breakfast is ready!

3. Smoothie Bowl

Smoothie bowls are a colorful and nutritious way to start your day, and they allow for endless creativity with toppings!

How to Make It:

  • Blend the Base: In a blender, combine 1 frozen banana, a handful of spinach, 1 cup of frozen berries, and 1/2 cup of almond milk. Blend until smooth.
  • Pour and Top: Pour the smoothie into a bowl and top it with your favorite fruits, nuts, seeds, and a drizzle of honey. I love adding granola for a crunchy texture.

The fun part is experimenting with different fruit combinations and toppings. Each day can be a new adventure for your taste buds!

4. Greek Yogurt Parfait

Greek yogurt parfaits are both delicious and visually appealing. They’re perfect for when you need something quick yet satisfying.

How to Make It:

  • Layer Ingredients: In a glass or bowl, layer Greek yogurt, granola, and fresh fruits.
  • Sweeten to Taste: If you like a bit more sweetness, drizzle some honey or maple syrup on top.
  • Optional: Add Nuts: A handful of nuts or seeds can add an extra crunch and health boost.

I find this to be a great on-the-go breakfast. Just prepare it in a portable container, and you’re set!

5. Breakfast Burrito

Breakfast burritos are a quick and savory option that can be customized to fit your taste.

How to Make It:

  • Prepare the Fillings: Scramble 2 eggs in a skillet with a touch of oil. Add in some cooked bacon or sausage if you like.
  • Assemble the Burrito: Place the scrambled eggs in the center of a tortilla and top with cheese, salsa, avocado slices, and a handful of spinach.
  • Wrap and Enjoy: Roll it up, and it’s ready to eat!

These burritos can also be made ahead and frozen. Just heat them in the microwave before eating.

6. Peanut Butter Banana Toast

This combination is simple yet satiating, perfect for those in need of protein and energy.

How to Make It:

  • Toast the Bread: Use wholegrain or your preferred type of bread.
  • Spread the Peanut Butter: Spread a generous layer of peanut butter on the toast.
  • Add the Banana: Slice a banana and arrange the slices on top of the peanut butter.
  • Optional: Sprinkle Add-ons: You can add some chia seeds, a sprinkle of cinnamon, or a drizzle of honey for extra flavor.

7. Quick Veggie Omelette

For a protein-packed, veggie-filled breakfast, a quick omellete is the way to go.

How to Make It:

  • Whisk the Eggs: In a bowl, whisk 2-3 eggs with a dash of milk, salt, and pepper.
  • Prepare the Veggies: Chop up your favorite vegetables—bell peppers, onions, tomatoes, and spinach work great.
  • Cook the Omelette : Heat a little oil in a pan, add the veggies, and cook for a couple of minutes. Pour in the egg mixture and cook until the eggs are firm.

Feel free to add some cheese or ham if you’re craving something extra.

Starting your day with a nutritious breakfast doesn’t have to be difficult or time-consuming. These seven options are all quick, easy, and versatile enough to fit any taste preference. Happy breakfast making!
